Brian s'est souvent posé cette question et a décidé d'y répondre avec ce vin : comment décrire une parcelle de terre très spécifique sans parler des variations de millésime ? Le Cabernet Franc Legacy 1.0 est un assemblage de 10 années consécutives (de 2010 à 2020) racontant l'histoire du vignoble Bo-teek, sa croissance, l'histoire et la pureté de ce clone 214 de Cabernet Franc unique. Au nez, ce vin dévoile des arômes très classiques de Cabernet Franc, comme la violette, la réglisse, la confiture de framboise, le poivron rouge rôti et le clou de girofle. En bouche, c'est un véritable chef-d'œuvre du Niagara : onctueux, velouté, riche, dense, pur, suave et concentré, avec de multiples nuances de saveurs. En bouche, l'attaque offre des notes de fruits rouges et bleus comme la framboise mûre, la fraise, la myrtille et la prune. Le milieu de bouche est riche en réglisse, cappuccino, gelée de poivrons rôtis, menthe, chocolat noir et feuilles de tabac moelleuses. La finale, tout aussi impressionnante et complexe que le reste du vin, dévoile des notes de poivre blanc, de piment, d'épices de Noël et des tanins longs et tenaces, mais doux.
