2022 Ferox "Silver Lion Collection" Riesling🔥93+pts 🔥Exclusive Library Release

$35.00

Regular: $40

This is where the Mosel (region of Germany) meets Niagara. This wine is full of intrigue, almost mythical. The richness and the softness are a centerpiece of this Riesling, but minerality and complexity also highlight the profile of this wine. The residual sugar melts perfectly with the high acidity component, making a marriage towards greatness. Aromas of green apple, lime, peach, apricot and orange are all mingling to highlight what to expect on the nose, also including floral aromas and the classic “kerosene” aspect, which make this wine even more “Riesling.”

The palate is very well layered offering flavours of citrus and orchard fruits like lime, lemon, pomelo, mango and peach. A layer of honeyed chamomile takes place after the mid-palate before an explosion of stony minerality, just before the finish. A spark of ginger highlights the finale, taking the length to the next level. A fantastic complement to the Dry Riesling also offered by Ferox. Aged remarkably well and improved over the last 2 years. (Carl Boucher, 2025, re-tasted 2026).

Winery Notes:

To honour the second coming of the sold out 2021 Chardonnay Reserve, this 2021 Chardonnay RII evokes an inspiration of Côte Chalonnaise, yet is authentic to Niagara. The wine presents with a medium gold colour, courtesy of blending stainless steel (SS) and barrel-aged (BA) components. Primary aromatics of lemon peel, honeysuckle, Comice pear, coconut and acacia dominate, with subtle secondary notes of toast, yoghurt, biscuit and brioche evident once warmed and aerated – courtesy of fine lees aging for 3 years, and 100% malolactic conversion (MLC). The palate mirrors the nose, with a focus on honeydew melon, ripe Anjou pear, lychee and vanilla, with our barrel program highlighting structure. Acidity is lively yet balanced with the glycerol and texture of this wine, with slight residual sugar harmonizing the tasting experience.

100% of the Chardonnay was picked from our South Block, from vines planted in 1998 on September 21st, 2021. Fruit was machine picked, optically sorted and pressed within 15 minutes of being picked. After cold settling, the juice fermented for 4 weeks, no greater than 18ºC. Once MLC was completed for the barrel-destined portion of wine, the volume was barreled down into 6 x 225L barriques with fine lees. The remaining volume was not put through MLC and stayed hermetically in stainless steel. After 3 years of aging, the wine was racked and blended, before fining, filtration and bottling on May 5th, 2025.

FOOD PAIRINGS AND SERVING TEMPERATURE

When pairing, look to foods that have salt and acidity, thereby making the wine perceptively smoother, richer, fruitier and less bitter / acidic. Dishes like Enchilada stuffed pasta shells or lentil Bolognese will help brighten the wine, while still showcasing it’s intense aromatic and palate profile. Alternatively, dishes like a pine-nut crusted Tilapia and broccolini with lemon will highlight the textural components of this Chardonnay, whilst delivering acid and umami notes.

I have to agree with winemaker Fabian Reis on this one: this is a true homage to the Chablis style of Chardonnay. We often use these international references, but this unoaked Chard truly lives up to this one with it's nervy, steely, stoney and energetic expression. The nose is pure and totally Chardonnay - almost traditional method-like with a bit of almond and croissant aromas. Citrus and chamomile also support the aromatic profile. On the palate? Lime juice, lime peel, green apple, pink grapefruit. The highlight is the finish with a slight salinity and evolving, layered minerality. This is one of the most serious unoaked Chards I have tasted to date. (Carl Boucher, Sept 19, 2025).

2020 Ferox “Silver Lion Collection” Cabernet Sauvignon🔥93+pts

$65.00

Definitely one of the very best and most pure Cabernet Sauvignons I have tasted from Canada this year! I can also tell that there's so much more to come for this wine. An Old World style wine made by Ferox, with a left-bank Bordeaux result in terms of firm structure, bold tannins, and acidity level. Filled with tension, an evident oak profile, and off the charts aging potential. On the nose, aromas of black fruits, dry herbs, leather, and graphite. The texture is rich and also offers precision. On the palate, the aromas are well defined and powerful, highlighting blackberry, black currant, blue plum, dark chocolate, chewy tobacco leaves and a bright hint of vanilla and crabapple on the mid palate. A nice sequence of oak spice follows, then a lengthy charcoal mineral finish. This wine can hit 15+ years of aging if cellared properly. Man that I love that wine, holy smokes! (Carl Boucher, Sept 20, 2025).

2020 Ferox “Silver Lion Collection” Cabernet Franc | 91pts

$65.00

This wine is an interesting combination of the Ferox house style vis a vis vintage typicity. An obvious “Old World” influenced Ferox house style, blended in the incredibly warm 2020 vintage which typically develops more fruity and juicy wines. So: big and juicy, mixed with earthy and restrained! Very interesting… I love it. On the nose, I found the classic aromas of cherrywood provided by the Cab Franc, added in dark cherry, wild raspberry, licorice and vanilla. The palate is evolving nicely towards richness and density, backed by a stunning frame of acidity. The tannins have started to melt into the wine and the oak effect is not hijacking the profile. Everything is in perfect harmony. Flavours of red and dark cherry, blackberry, blueberry jam, soy glaze, mocha and a long lingering finish with cardamom and pepper are on full display from start to finish. (Carl Boucher, re-tasted Sept 20, 2025).

NV Ferox Vantage Red | 90+pts

$16.75

This crushable medium body red blend comes with a great price point and is normally only served at restaurants. A great example of a wine where the price point adds half a point to the wine. How can you pass up a well structured red at just $16.75 all in?

This unusual multi-vintage blend made mostly of Zweigelt and Syrah is super approachable and surprisingly layered. Aromas of blueberry pie, smoked meat, black cherry and a hint of cinammon.

The palate is also approachable with a nice level of acidity and flavours of blueberry, black cherry, blue plum, a little bit of cocoa, a hint of leather and black pepper (on the finish) - all in all, more complex than you'd expect.

Makes for great 'cellar insurance' and a wine that puts a smile on my face. A lot of fun! (Carl Boucher, Sept 19, 2025).

We tasted this wine blind with members again on February 28, 2026. The wine has improved with six months of bottle age and is even more of an amazing value find! Perhaps THE top value Canadian red we've tasted in years! (Carl Boucher, February 28, 2026).

Carl's Wine Club is Canada's first pan-Canadian, direct-to-consumer wine club.

Being a member of the wine club is FREE and you have access to our informative emails and our live virtual events with Carl to learn more about Canadian wineries.

We feature a different Canadian winery every 1-2 weeks with a specially curated mix of wines. You choose if and how much wine to purchase, with winery direct pricing and shipping deals.

On Wednesdays (yes Wine Wednesdays!) we also go LIVE on our social media platforms to chat about Canadian wine and often interview winemakers. Cheers!

How does shipping work?

The wineries ship these wines to you via couriers like Canada Post, UPS, Purolator, ATS or GLS and the wines arrive right to your doorstep! No need to spend time or gas or manpower to visit a store.

Your wines will ship within 1-2 weeks of your order date, as wineries ship out our club orders all together in a few batches. You'll receive a tracking number from our system and sometimes also from the winery's system.

Someone over the legal drinking age must be present at the time of delivery and provide ID to the delivery driver (this is a legal requirement). Please do your best to ensure that an adult is available to receive the order on the anticipated delivery date.
