This spectacular traditional method sparkling is bone dry, crisp and energetic, with fine creamy bubbles, outsanding texture and world class complexity. It spent over seven years on it's lees after being bottled in 2018, and disgorged at the end of 2025. Knowing that, the level of complexity and texture makes so much sense. 

 

This is the third batch disgorged, and the last chance to get this rare bubbly into your cellar.

 

Pomegranite, cranberry, peach, lemon zest, as well as a nice toastiness bring this PEC sparkling to a Champagne-level. This is an anniversary type of sparkling wine, to open for a special occassion. Cheers! (Carl Boucher, July 19, 2026).
