Without a shadow of a doubt, this is my highest rated, top wine tasted in 2025. I very rarely come across a wine at this level…I would say it’s in my top 5 Canadian wines I’ve tasted, ever. This wine can compete with some of the best Champagne houses, often at triple the price or more. La Grande Dame of Veuve Cliquot and Cristal Roederer come to mind. The nose is expressive and complex, suggesting lemon curd, guava, white peach, chamomile, and classic fresh baked croissant. The palate is creamy, but also precise and tense – smooth but nervy – energetic and soft. Every sip evolves. From lemon, to orchard, to red fruits. There’s spice. There’s lots of salinity. There’s incredible length. Multiple layers. And the mousse is one of the most opulent and decadent that I’ve ever tasted on a Canadian wine. It spent five years before release. While it was once austere, it has now arrived, and showcases what you can expect from the best of traditional method bubblies – Canadian or not. Truly a masterpiece and testament to the greatness we can achieve with the unique site and special terroir of the Bay of Fundy. (Carl Boucher, August, 2025).
