Also sourced from the Moira Vineyard, this 100% Chardonnay traditional method sparkling wine showcases purity, tension, and energy. Aged for five years on the lees, it has developed a remarkably smooth texture and displays more pronounced autolytic characteristics than the NV Brut. This is a far more cerebral wine than your average sparkling. On the nose, it offers a complex bouquet of citrus, green apple, brioche, delicate floral notes, and a whisper of cardamom rising from the glass. The palate is bone dry, leaning toward a Brut Nature style, with fine, precise bubbles that dance across the palate at just the right moments. Flavours of pink grapefruit, zesty lemon, and Granny Smith apple mingle with brioche and fresh croissant.
