A very unique and special wine. The Obsidian Cabernet Sauvignon was hand-harvested from the Heron Pond Benchland Vineyard on the Beamsville Bench. The grapes were slowly dried in an Appassimento drying chamber for 80 days, concentrating the grapes’ natural flavour and sugar by reducing juice volume by 35% and increasing sugar levels to 29.6° Brix. The dehydrated grapes were then fermented over a two-week period and aged for 25 months in French oak barrels, 50% new.

The result is a luxurious, full-bodied wine with notes of black cherry, dates, raisins, pipe tobacco, graphite and Christmas spices. The palate is deeply textural, spicy, rich, and powerful, delivering flavours of dark plum, black cherry, fig, chewy tobacco, ganache chocolate, and oak-driven spice. The finish is long and complex.

This is, without question, the best Canadian alternative to a premium Italian Amarone. Only 57 cases made.
