From 40 year old vines at Hemeris Vineyard on the Beamsville Bench, this 100% Chardonnay ā€œMethode Champenoiseā€ sparkling wine was fermented in French barrels for 6 months and aged on its lees for 42 months. Dry, expressive, directional and angular (in the right way), this bottle of bubbly is as close to a Champagne as you can get. On the nose, delightful aromas of lemon, green apple, jasmine flowers, orange ginger tea and baked goods line up in a perfect sequence. The mousse is generous, tenacious, refined and soft , while the overall length is spectacular. On the palate, the vibrant acidity lifts all flavours starting with lemon meringue, pear, baked croissant and a resounding saline minerality on the back-end that sticks around for an impressive amount of time. Another masterpiece from Ilya Senchuk. (Carl Boucher, September 1, 2024). 125 cases made.
